Date Balls (Energy Bites)
Ingredients
- 1½ cups pitted dates
- 1 cup rolled oats
- ½ cup nut butter (peanut, almond, or cashew)
- ½ cup chopped nuts (almonds, walnuts, or pecans)
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Optional add-ins
- 2 tablespoons cocoa powder
- 2 tablespoons chia seeds or flaxseed
- Unsweetened shredded coconut
- Mini chocolate chips
Instructions
- Soften dates (if needed)
- If dates are dry, soak in warm water for 5 minutes, then drain well.
- Blend
