- 1 tablespoon oyster sauce
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium carrot, julienned or thinly sliced
- 1 small broccoli head, cut into florets
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- Salt and pepper, to taste
- Optional garnish: green onions, sesame seeds
For the Fried Rice:
- 3 cups cooked rice (preferably day-old, cold rice works best)
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- ½ cup frozen peas and corn
- ½ small onion, diced
- 2 cloves garlic, minced
Instructions
Step 1: Marinate the Beef
- In a bowl, combine sliced beef with soy sauce, oyster sauce, cornstarch, and sesame oil.
- Mix well and let it marinate for 15–20 minutes while preparing vegetables.
Step 2: Prepare the Fried Rice
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
- Add diced onion and garlic; sauté until fragrant.
- Push onions to the side, pour in beaten eggs, and scramble until cooked.
- Add cold rice, breaking up any clumps.
- Stir in soy sauce, peas, and corn. Cook for 3–4 minutes, stirring frequently.
- Transfer fried rice to a plate and set aside.
Step 3: Stir-Fry the Beef
- Heat 2 tablespoons vegetable oil in a large skillet or wok over high heat.
- Add marinated beef in a single layer and sear for 2–3 minutes until browned but not fully cooked. Remove and set aside.
Step 4: Stir-Fry the Vegetables
- In the same pan, add garlic and ginger; sauté for 30 seconds.
- Add carrots and broccoli first, stir-fry 2–3 minutes.
- Add bell peppers and cook another 2 minutes, keeping vegetables crisp-tender.
Step 5: Combine Beef and Vegetables
- Return the beef to the pan.
- Stir everything together and cook 2–3 minutes until beef is cooked through and vegetables are coated in sauce.
- Taste and adjust seasoning with salt, pepper, or extra soy sauce.
Step 6: Serve
- Serve the stir-fried beef and vegetables over the fried rice or on the side.
- Garnish with chopped green onions and sesame seeds if desired.
Tips
- Use high heat for stir-frying to keep beef tender and vegetables crisp.
- Day-old rice works best for fried rice because it’s less sticky.
- You can swap vegetables based on preference: snap peas, mushrooms, or baby corn are great additions.
