This recipe uses canned peaches and a simple biscuit-style topping, so you can have dessert ready in about 40 minutes.
Ingredients (serves 6–8)
- 2 cans (15 oz each) sliced peaches in juice, drained slightly
- ½ cup granulated sugar (adjust to taste)
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup milk
- ⅓ cup unsalted butter, melted
Optional toppings
- Pinch of nutmeg
- Vanilla ice cream or whipped cream for serving
Directions
- Preheat the oven
Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish or similar size. - Prepare the fruit
In a medium bowl, mix drained peaches with ½ cup sugar, cinnamon, and vanilla extract. Spread evenly in the prepared baking dish. - Make the batter
In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Stir in milk until smooth, then fold in melted butter. - Assemble the cobbler
Pour the batter over the peaches. Do not stir—the batter will spread and bake over the fruit naturally. - Bake
Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the batter comes out clean. - Cool slightly and serve
Let cobbler cool 5–10 minutes before serving. Top with ice cream or whipped cream if desired.
Tips for Success
- Extra flavor: Sprinkle a little extra cinnamon or nutmeg on top before baking.
- Juicier fruit: Reserve 2 tablespoons of peach juice and drizzle over the batter before baking.
- Quick variation: Use frozen peaches (thawed) instead of canned.
