🤠 Hearty Crockpot Cowboy Soup
Makes 6–8 big bowls
🥩 Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 medium potatoes, diced
- 1 can (15 oz) kidney beans, drained & rinsed
- 1 can (15 oz) pinto beans, drained & rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) Rotel (diced tomatoes + green chilies)
- 4 cups beef broth
- 1 tbsp tomato paste
- 1½ tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- Salt & black pepper to taste
🍲 Instructions
- Brown the beef
In a skillet, cook ground beef with onion until no longer pink.
Add garlic and cook 30 seconds. Drain excess fat. - Load the crockpot
Add beef mixture and all remaining ingredients to slow cooker. - Cook low & slow
- LOW: 6–7 hours
- HIGH: 3–4 hours
Until potatoes are tender.
- Taste & adjust
Add salt, pepper, or spice as needed.
