Greek Chicken Gyro Bowls with Lemon Tahini Sauce

Ingredients
For the Chicken
- 1.5 lb boneless skinless chicken thighs (or breasts)
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
For the Bowls
- 2 cups cooked rice (or cauliflower rice)
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 1 cup shredded lettuce
- 1 cup crumbled feta
- 1/2 cup Kalamata olives, sliced
- Optional: pita bread or warm naan
Lemon Tahini Sauce
- ½ cup tahini
- ¼ cup lemon juice
- 2 tbsp olive oil
- 1–2 tbsp water (to thin)
- 1 garlic clove, minced
- ½ tsp salt
- ¼ tsp black pepper
- Optional: pinch of cumin or paprika
Instructions
1. Marinate the Chicken
- In a bowl, whisk together:
- Olive oil
- Lemon juice
- Garlic
- Oregano
- Cumin
- Paprika
- Salt & pepper
- Add chicken and coat well.
- Marinate 1–2 hours (or overnight).
2. Cook the Chicken
Grill method:
- Grill over medium-high heat 5–6 minutes per side, until cooked through.
Skillet method:
- Heat a little oil in a skillet over medium-high.
- Cook 5–6 minutes per side until browned and cooked through.

- In a bowl, whisk together:

- Garlic
- Salt & pepper
- Add water 1 tbsp at a time until desired consistency.
