Chicken
- 4 boneless skinless chicken breasts (or thighs)
- Salt & pepper, to taste
Potatoes
- 1Β½β2 pounds baby potatoes (or red potatoes), halved
Sauce
- 1 cup chicken broth
- Β½ cup grated Parmesan cheese
- ΒΌ cup unsalted butter, melted
- Β½ cup mayonnaise
- 1 tablespoon minced garlic (or 3β4 cloves)
- 1 teaspoon Italian seasoning
- Β½ teaspoon onion powder
- Β½ teaspoon garlic powder
- 1 tablespoon lemon juice (optional but recommended)
Finish (optional)
- Fresh parsley, chopped
- Extra Parmesan for topping
Instructions
1. Prep the potatoes
- Place halved potatoes in the bottom of the crockpot.
2. Season the chicken
- Season chicken breasts with salt & pepper.
- Place chicken on top of potatoes.
3. Mix the sauce
In a bowl, whisk together:

- Parmesan
- Melted butter

4. Pour & cook
