🥗 Creamy Macaroni Salad
Ingredients
- 3 cups elbow macaroni (cooked & cooled)
- 1 cup mayonnaise
- 1/2 cup sour cream or Greek yogurt
- 2 tbsp apple cider vinegar or lemon juice
- 1 tbsp Dijon mustard (optional but great)
- 1/2 cup finely chopped onion (red or white)
- 1/2 cup chopped celery
- 1/2 cup shredded carrot
- 1/2 cup chopped bell pepper (optional)
- 2 hard-boiled eggs, chopped (optional)
- 1 tsp sugar (optional)
- Salt & pepper to taste
- 1 tsp paprika (optional)
- Fresh parsley (optional)
How to Make
1) Cook the pasta
- Boil macaroni until al dente
- Drain and rinse under cold water
- Let it cool completely
2) Make the dressing
Mix in a bowl:
- mayonnaise
- sour cream or yogurt
- vinegar/lemon juice
- mustard
- sugar (if using)
- salt & pepper
3) Combine
Add the pasta and veggies to the dressing.
Mix until evenly coated.
4) Chill
Cover and refrigerate for at least 2 hours (best overnight).
5) Serve
Top with:
- paprika
- parsley
- extra chopped egg
