🥗 Creamy Chicken Bacon Salad
Ingredients
- 2 cups cooked chicken (shredded or chopped)
- 6 slices bacon, cooked and crumbled
- 1/2 cup celery, chopped
- 1/4 cup red onion, finely chopped (optional)
- 1/2 cup grapes or diced apples (optional, for sweetness)
- 1/2 cup mayonnaise (or Greek yogurt for lighter version)
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice or pickle juice
- Salt & pepper to taste
- Optional: 1/4 cup chopped nuts (pecans or almonds)
Instructions
- Cook and chop the chicken (leftover chicken works great).
- Cook bacon until crispy, then crumble.
- Mix chicken, bacon, celery, and onion in a bowl.
- In a separate bowl, whisk together mayo, mustard, and lemon/pickle juice.
- Pour dressing over salad and mix until coated.
- Season with salt & pepper.
- Chill for 30 minutes (optional but recommended).
