Ingredients
- 1½ lbs baby potatoes (red or gold), halved or quartered
- 1 lb fresh green beans, trimmed
- 6–8 slices bacon, chopped
- 2–3 cloves garlic, minced
- 1 packet ranch seasoning (or ~2 Tbsp homemade ranch mix)
- ½ tsp black pepper
- Salt, to taste
- Optional: 2 Tbsp butter or olive oil
- Optional garnish: fresh parsley or chives
Instructions
- Cook the potatoes
Bring a large pot of salted water to a boil. Add potatoes and cook until just fork-tender, about 10–12 minutes.
Add green beans during the last 3–4 minutes. Drain and set aside. - Cook the bacon
In a large skillet over medium heat, cook bacon until crispy.
Remove bacon with a slotted spoon and set aside, leaving the drippings in the pan. - Build the flavor
Add garlic to the bacon drippings and sauté for ~30 seconds (don’t burn it).
If the pan feels dry, add butter or olive oil. - Combine everything
Add potatoes and green beans to the skillet. Toss to coat.
