Ingredients

1 tbsp oil or butter

1 small onion, chopped

2 carrots, sliced

2 celery stalks, sliced

2 cloves garlic, minced

2 cups cooked chicken (shredded or diced)

6 cups chicken broth

1 cup potatoes (diced)

1 cup mixed vegetables (peas, corn, green beans, etc.)

1 bay leaf (optional)

Salt and pepper to taste

Optional herbs: thyme, parsley, or oregano
Instructions

Sauté vegetables
Heat oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 4–5 minutes until slightly soft. Add garlic and cook 30 seconds. -
Add broth & potatoes
Pour in chicken broth, add potatoes and bay leaf. Bring to a gentle boil. -
Simmer
Reduce heat and simmer for 10–15 minutes, until potatoes are tender. -
Add chicken & veggies
