Chicken Spinach & Mushroom (Low-Carb)

Ingredients
- 1.5 lb chicken breast (or thighs), sliced into strips
- 2 tbsp olive oil
- 8 oz mushrooms, sliced
- 3 cups fresh spinach
- 3 cloves garlic, minced
- 1 small onion, diced (optional)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- Optional: 1 tbsp cream cheese for extra creaminess
Instructions
1. Cook the chicken
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken strips and season with salt and pepper.
- Cook 5–7 minutes, until browned and cooked through.
- Remove chicken from skillet and set aside.
2. Sauté mushrooms & onions
- In the same skillet, add mushrooms (and onion if using).
- Cook 5 minutes until mushrooms release their moisture and start browning.
3. Add garlic & spinach
- Add garlic and sauté 30 seconds.
- Add spinach and cook until wilted.
4. Make the creamy sauce
- Pour in heavy cream and chicken broth.
- Stir in Parmesan and Italian seasoning.
- Let simmer 3–5 minutes until sauce thickens.
5. Combine & serve
- Return chicken to the skillet.
- Stir to coat in sauce.
- Simmer 2–3 minutes until heated through.
