🧀 Cheesy Chicken & Vegetable Skillet
Ingredients
- 1 lb (450g) chicken breast or thighs, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup broccoli florets
- 1 cup zucchini, sliced
- 1 cup mushrooms, sliced
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt & pepper, to taste
- 1/2 cup chicken broth (or water)
- 1 cup shredded cheddar cheese (or mozzarella)
- Optional: 1/4 cup grated parmesan
- Optional garnish: parsley or green onions
🥘 Instructions
1. Cook the Chicken
- Heat olive oil in a large skillet over medium-high heat
- Add chicken pieces and season with salt, pepper, paprika
- Cook 5–7 minutes, stirring until browned and cooked through
- Remove chicken from skillet and set aside
2. Sauté the Veggies
- In the same skillet, add onion and garlic
- Cook 1–2 minutes until fragrant
- Add bell pepper, broccoli, zucchini, and mushrooms
- Sauté 5–7 minutes until veggies are tender-crisp
3. Combine & Simmer
- Return chicken to the skillet
- Add chicken broth and Italian seasoning
- Simmer 2–3 minutes to let flavors combine
4. Add the Cheese
- Sprinkle shredded cheese evenly over the top
- Cover skillet and let cheese melt (2–3 minutes)
5. Serve
- Garnish with parsley or green onions
- Serve as-is, or with rice, pasta, or cauliflower rice
