🥗 Apple Salad with Honeycrisp (serves 4)
Ingredients
Salad
- 2 Honeycrisp apples, cored and sliced (leave the skin on for crunch)
- 4 cups mixed greens (spinach, arugula, or spring mix)
- 1/2 cup walnuts or pecans, toasted
- 1/2 cup dried cranberries (optional)
- 1/4 cup crumbled feta or goat cheese (optional but amazing)
- 1/2 red onion, thinly sliced (optional)
Dressing
- 3 tbsp olive oil
- 1½ tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt & pepper to taste
Instructions
- Toast the nuts
In a dry skillet over medium heat, toast walnuts/pecans for 3–4 minutes until fragrant. Set aside. - Make the dressing
Whisk together olive oil, apple cider vinegar, honey, Dijon, salt, and pepper. - Assemble the salad
Toss greens, apple slices, nuts, cranberries, and onions. - Add cheese & dressing
Sprinkle cheese on top and drizzle dressing right before serving.
