Oven-Fried Potatoes & Onions
Ingredients
- 4 medium potatoes (russet or Yukon gold work well)
- 1 medium onion
- 2–3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional, but tasty)
- ½ tsp garlic powder (optional)
- Optional add-ins: rosemary, thyme, or parsley
Instructions

- Wash potatoes and cut into thin slices or small cubes (thinner = crispier).
- Slice the onion into thin strips.
- In a large bowl, toss potatoes and onions with olive oil, salt, pepper, and seasonings.
- Spread everything in a single layer on a baking sheet (important for crisping).
- Bake for 20 minutes, then flip/stir.
- Bake another 15–25 minutes until golden and crispy.
- Taste and adjust seasoning before serving.
Tips
- For extra crispiness, soak cut potatoes in cold water for 20–30 minutes, then dry well.
- Don’t overcrowd the pan—use two sheets if needed.
- Serve with ketchup, ranch, or eggs on the side.
