π Sesame-Glazed Chicken Medallions with Chili & Rosemary
Ingredients
- 1 lb (450g) chicken breast or tenderloins
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tbsp sesame oil
- 2 tbsp sesame seeds
- 1β2 red chilies, thinly sliced (or 1 tsp chili flakes)
- 1β2 sprigs fresh rosemary, finely chopped
- 2 cloves garlic, minced
- Salt & pepper, to taste
- Optional: 1 tbsp rice vinegar or lemon juice
- Garnish: chopped green onions
Instructions
1. Prepare the Chicken
- Slice chicken breast into medallions (about 1/2 inch thick)
- Season lightly with salt & pepper
2. Make the Glaze
In a bowl, mix:
- soy sauce
- honey
- sesame oil
- minced garlic
- chopped rosemary
- chili (sliced or flakes)
3. Sear the Chicken
- Heat olive oil in a skillet over medium-high heat
- Add chicken medallions and cook 2β3 minutes per side until golden brown
- Remove chicken from skillet and set aside
4. Add the Glaze
- Lower heat to medium
- Add the glaze mixture to the skillet
- Cook 1β2 minutes until it thickens slightly
5. Coat & Finish
- Return chicken to the pan
- Toss to coat evenly with glaze
- Sprinkle sesame seeds and cook 1 more minute
6. Serve
- Garnish with green onions and extra sesame seeds
- Serve with rice, noodles, or a side of steamed veggies
