🌵 Pineapple Cowboy Candy (Sweet & Spicy Pineapple Preserves)
Ingredients
- 1 (20 oz) can crushed pineapple (or fresh, finely chopped)
- 1 cup sugar
- 1 cup apple cider vinegar
- 1 tbsp pickling salt (or kosher salt)
- 1–2 tsp red pepper flakes (adjust for heat)
- 1 tsp mustard seeds (optional)
- 1 tsp celery seeds (optional)
- 1–2 cloves garlic, minced (optional)
Instructions
1. Prepare the Pineapple
If using canned pineapple:
- Drain well and squeeze out excess liquid.
If using fresh:
- Chop finely or crush.
2. Cook the Mixture
In a large pot, combine:
- Pineapple
- Sugar
- Vinegar
- Salt
- Red pepper flakes
- Optional seeds/garlic
Bring to a boil over medium-high heat, stirring frequently.
3. Simmer Until Thick
