Homemade Tzatziki
- 1 cup Greek yogurt (full-fat is best)
- ½ large cucumber, grated & squeezed dry
- 1 clove garlic, very finely minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1–2 tbsp fresh dill or parsley, chopped
- Salt to taste
Instructions
1. Marinate the Chicken
Mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper.
Coat chicken and marinate at least 30 minutes (up to 12 hours).
2. Make the Tzatziki
- Grate cucumber and squeeze out excess liquid (important!)
- Mix with yogurt, garlic, olive oil, lemon juice, herbs, and salt
- Chill until ready to serve (flavor gets better with time)
3. Grill the Chicken
- Preheat grill or grill pan to medium-high
- Grill chicken 5–7 minutes per side, until charred and cooked through
- Rest 5 minutes, then slice
