Ingredients
- 1 medium head of cabbage, chopped
- 1 large onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 bell pepper, chopped (optional)
- 3–4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable or chicken broth
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 bay leaf
- Salt & pepper to taste
- Optional: 1–2 cups cooked shredded chicken or ground turkey
Instructions
1. Sauté veggies
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and bell pepper.
- Cook 5–7 minutes until softened.
2. Add garlic

3. Add cabbage & broth

5. Simmer
