with Cauliflower, Carrots & Celery
Ingredients
- 1 Tbsp olive oil or coconut oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 Tbsp fresh ginger, grated (or 1 tsp ground)
- 1½ tsp ground turmeric
- ½ tsp black pepper (important for turmeric absorption)
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 small head cauliflower, chopped into florets
- 6 cups vegetable broth
- 1 bay leaf
- Salt, to taste
- Optional add-ins:
- ½ tsp cumin or coriander
- 1 cup spinach or kale
- Juice of ½ lemon
Instructions
- Sauté the base
Heat oil in a large pot over medium heat.
Add onion and cook until soft, about 4–5 minutes. - Bloom the spices
Stir in garlic, ginger, turmeric, and black pepper.
