π Seared Cod with Sticky Sweet Chili & Lime Glaze
Ingredients (Serves 2)
For the Cod
- 2 cod fillets (6β7 oz each), skinless
- Salt & black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 tbsp fresh parsley, chopped
For the Sticky Sweet Chili & Lime Glaze
- 3 tbsp sweet chili sauce
- 1 tbsp honey or maple syrup
- 1 tbsp soy sauce
- 1 tbsp lime juice (fresh)
- 1 tsp lime zest
- 1 tsp rice vinegar (optional, for extra tang)
- 1/2 tsp chili flakes (optional, for heat)
Instructions
1. Prep the Cod
- Pat the cod dry with paper towels.
- Season both sides with salt and pepper.
2. Make the Glaze
- In a small bowl, mix:
- sweet chili sauce
- honey
- soy sauce
- lime juice & zest
- rice vinegar
- chili flakes
- Set aside.
3. Sear the Cod
- Heat olive oil in a skillet over medium-high heat.
- Add cod fillets and sear 2β3 minutes on each side until golden.
- Reduce heat to medium-low and add butter + garlic.
- Spoon the garlic butter over the cod for 1 minute.
4. Finish with Glaze
- Pour the glaze over the cod in the pan.
- Cook for another 1β2 minutes, spooning the glaze over the fish.
- The glaze should thicken and become sticky.
5. Serve
- Plate the cod and spoon extra glaze over the top.
- Garnish with fresh parsley and lime wedges.
- Great with rice, noodles, or steamed veggies.
β Tips for Perfect Cod
- Donβt move the fish while searing β let it form a golden crust.
- If the glaze thickens too fast, add a splash of water.
- Cod is done when it flakes easily and is opaque.
