🥇 Golden Crispy Chicken with Parmesan Mushroom Sauce
🍗 Crispy Chicken
- 4 boneless chicken breasts or thighs
- Salt & black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp Italian seasoning
- ½ cup all-purpose flour
- 2 eggs, beaten
- ¾ cup breadcrumbs or panko
- ½ cup grated Parmesan
- Oil for frying (or shallow pan-fry)
🍄 Parmesan Mushroom Sauce
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream (or half-and-half)
- ½ cup grated Parmesan
- ½ tsp Italian seasoning
- Salt & pepper to taste
- Optional: splash of chicken broth or white wine
👩🍳 Instructions
1️⃣ Prep the chicken
- Pat chicken dry.
- Season both sides with salt, pepper, garlic powder, paprika, and Italian seasoning.
- Set up dredging station:
- Bowl 1: flour
- Bowl 2: eggs
- Bowl 3: breadcrumbs + Parmesan
2️⃣ Bread & fry
- Dredge chicken in flour → egg → breadcrumb-Parmesan mix.
- Heat oil over medium heat.
- Fry 4–5 minutes per side until golden and cooked through.
- Remove and drain on paper towels.
(Oven option: bake at 400°F / 205°C for 20–25 min, flipping once)
3️⃣ Make the mushroom sauce
- In the same pan, melt butter.
- Add mushrooms and cook until golden (5–7 min).
- Stir in garlic, cook 30 seconds.
- Add cream (and broth/wine if using).
- Simmer 3–5 min until slightly thick.
- Stir in Parmesan, seasoning, salt & pepper.
4️⃣ Serve
- Spoon warm Parmesan mushroom sauce over crispy chicken.
- Garnish with parsley or extra Parmesan.
